Scale
Meat:
- 1 1/2 lbs sirloin steak
Produce:
- 2 tsp chipotle powder
- 1 bunch fresh cilantro, chopped
- 8 cloves garlic, minced
- 1/2 lime (juiced)
- 1 tsp garlic powder
- 1 tsp onion powder
Condiments:
- 1 (7 oz) can chipotle peppers in adobo sauce
- 1/4 cup honey
Baking & Spices:
- 2 tsp salt
- 1/2 tsp black pepper
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp cumin
Oils & Vinegars:
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
Instructions
1. Prepare the Marinade:
- In a blender or food processor, combine chipotle peppers in adobo sauce, olive oil, red wine vinegar, honey, lime juice, garlic, chipotle powder, chili powder, cumin, oregano, onion powder, garlic powder, salt, and black pepper. Blend until smooth.
2. Marinate the Steak:
- Place the sirloin steak in a large resealable plastic bag or shallow dish.
- Pour the marinade over the steak, ensuring it’s fully coated. Cover and refrigerate for at least 15 minutes (or up to 2 hours for deeper flavor).
3. Cook the Steak:
- Heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil to the pan if not using a non-stick surface.
- Remove the steak from the marinade and cook for 4–5 minutes per side, or until the internal temperature reaches your desired level of doneness (135°F for medium-rare, 145°F for medium).
- Let the steak rest for 5 minutes before slicing thinly against the grain.
4. Serve:
- Garnish with fresh chopped cilantro and a squeeze of lime juice.
- Use the steak for tacos, burrito bowls, salads, or serve with rice and beans for a complete meal.
Notes
- For extra smoky flavor, cook the steak on an outdoor grill instead of a skillet.
- Adjust the spiciness by adding more or less chipotle peppers or powder.
- Leftover steak can be stored in an airtight container in the refrigerator for up to 3 days and reheated for meals.
