For the Crust:

- 1 cup granulated sugar
- 1 cup heavy cream
- 1/2 cup bubblegum syrup or melted bubblegum-flavored candy, cooled
- 1 tsp vanilla extract
- 1 tbsp unflavored gelatin
- 1/4 cup cold water
- Pink food coloring (optional)

Instructions
Step 1: Prepare the Crust
- Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until the texture resembles wet sand.
- Gently fold in the Pop Rocks to keep their fizz intact.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Chill in the refrigerator while preparing the filling.
Step 2: Prepare the Cheesecake Filling
- Sprinkle gelatin over cold water in a small bowl and let it bloom for 5 minutes. Heat in the microwave for 10–15 seconds until dissolved.
- Beat cream cheese and sugar in a large bowl until smooth and creamy.
- Add bubblegum syrup, vanilla extract, and dissolved gelatin. Mix until fully combined.
- In a separate bowl, whip heavy cream to stiff peaks. Gently fold it into the cream cheese mixture.
- Add pink food coloring (if desired) and mix gently until the color is uniform.
Step 3: Assemble the Cheesecake
- Pour the filling over the prepared crust, smoothing the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 4–6 hours, or until the cheesecake is firm.
