Ingredients

Units Scale

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 packets Pop Rocks (any flavor)

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1/2 cup bubblegum syrup or melted bubblegum-flavored candy, cooled
  • 1 tsp vanilla extract
  • 1 tbsp unflavored gelatin
  • 1/4 cup cold water
  • Pink food coloring (optional)

For the Topping:

  • Whipped cream (for garnish)
  • Additional Pop Rocks
  • Bubblegum pieces (optional)

Instructions

Step 1: Prepare the Crust

  1. Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl until the texture resembles wet sand.
  2. Gently fold in the Pop Rocks to keep their fizz intact.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Chill in the refrigerator while preparing the filling.

Step 2: Prepare the Cheesecake Filling

  1. Sprinkle gelatin over cold water in a small bowl and let it bloom for 5 minutes. Heat in the microwave for 10–15 seconds until dissolved.
  2. Beat cream cheese and sugar in a large bowl until smooth and creamy.
  3. Add bubblegum syrup, vanilla extract, and dissolved gelatin. Mix until fully combined.
  4. In a separate bowl, whip heavy cream to stiff peaks. Gently fold it into the cream cheese mixture.
  5. Add pink food coloring (if desired) and mix gently until the color is uniform.

Step 3: Assemble the Cheesecake

  1. Pour the filling over the prepared crust, smoothing the top with a spatula.
  2. Cover with plastic wrap and refrigerate for at least 4–6 hours, or until the cheesecake is firm.

Step 4: Decorate and Serve

  1. Before serving, top the cheesecake with whipped cream swirls, additional Pop Rocks, and bubblegum pieces for a festive touch.
  2. Serve immediately to enjoy the fizzy surprise of the Pop Rocks crust and toppings.

Notes

  1. Fizzy Fun: Add Pop Rocks to the crust and toppings just before serving to maintain their signature fizz.
  2. Perfect Chill: Ensure the cheesecake chills for at least 4 hours for a firm, sliceable texture.
  3. Color Boost: Pink food coloring enhances the whimsical bubblegum theme but is optional.
