Description
A hearty and flavorful Caribbean-inspired vegan dish, Brown Stew Tofu features tofu marinated and simmered in a rich, savory brown sauce made with vegetables, herbs, and spices.

- 14 oz extra firm tofu, pressed and cubed
- 2 tbsp soy sauce
- 1 tbsp browning sauce
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, sliced
- 1 carrot, sliced
- 2 sprigs thyme
- 2 scallions, chopped
- 1 tomato, chopped
- 1 tsp allspice
- 1 cup vegetable broth
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess moisture, then cut into cubes.
- Marinate tofu in soy sauce and browning sauce for at least 30 minutes.
- Heat oil in a skillet over medium heat and fry tofu until golden brown. Remove and set aside.
- In the same skillet, sauté onion, garlic, bell pepper, and carrot for 3-4 minutes.
- Add thyme, scallions, tomato, and allspice. Cook for another 2 minutes.
- Return tofu to the pan and pour in the vegetable broth.
- Simmer uncovered for 10-15 minutes until sauce thickens.
- Season with salt and pepper to taste. Serve hot with rice or ground provisions.
Notes
- Use browning sauce sparingly—it’s strong and adds deep color and flavor.
- Tofu can be air-fried or baked instead of pan-fried for a lighter version.
- Feel free to add Scotch bonnet pepper for a spicy kick.
