Description

Ingredients

  • 1 medium head cauliflower, riced (about 3 cups)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1 cup steamed broccoli florets, chopped
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil (optional, for brushing crust)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rice the cauliflower in a food processor until it resembles fine crumbs.
  3. Microwave riced cauliflower for 4-5 minutes, then let it cool slightly. Use a clean towel to squeeze out as much moisture as possible.
  4. In a large bowl, combine the cauliflower, mozzarella, Parmesan, egg, garlic powder, oregano, and salt. Mix well to form a dough.
  5. Transfer the dough to the prepared baking sheet and press into a thin, even circle about 1/4 inch thick.
  6. Bake the crust for 15-20 minutes or until golden brown and firm.
  7. Remove crust from the oven and top with chopped broccoli and shredded cheddar cheese.
  8. Return to oven and bake for an additional 8-10 minutes, or until cheese is melted and bubbly.
  9. Let the pizza cool for a few minutes before slicing and serving.

  • For a crispier crust, broil the pizza for 1-2 minutes at the end of baking.
