- 1 tablespoon lemon juice
- 1 teaspoon unflavored gelatin
- 1 tablespoon cold water
- 1 cup heavy whipping cream, chilled
- 1/2 teaspoon vanilla extract
- Optional: fresh berries, mint, or whipped cream for garnish
Instructions
- Make Blackberry Puree:
- In a saucepan, cook blackberries, sugar, and lemon juice over medium heat until soft and juicy (about 5–7 minutes).
- Puree the mixture, then strain through a fine sieve to remove seeds. Let cool slightly.
- Bloom the Gelatin:
- Sprinkle gelatin over cold water and let sit 5 minutes.
- Warm the blackberry puree and stir in the gelatin until fully dissolved. Cool to room temp.
- Whip the Cream:
- In a bowl, whip heavy cream and vanilla until soft peaks form.
- Gently fold the cooled blackberry mixture into the whipped cream until smooth and fluffy.
- Chill and Serve:
- Spoon mousse into glasses or bowls. Chill at least 2 hours before serving.
- Garnish with berries or mint if desired.
Notes
- For a vegetarian version, use agar-agar instead of gelatin.
- Make ahead and chill overnight for best texture.
- Can be layered with crushed cookies or cake for parfaits.
