Description

This Beef Stroganoff is a hearty, comforting dish featuring tender strips of beef sautéed with mushrooms and onions in a creamy, tangy sour cream sauce. A timeless favorite, it’s perfect for a cozy weeknight dinner or a comforting weekend meal.


Ingredients

  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced (button or cremini)
  • 1 tablespoon flour (for thickening)
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1/2 cup sour cream
  • 1 teaspoon Worcestershire sauce (optional)
  • Fresh parsley, for garnish
  • Cooked egg noodles, rice, or mashed potatoes (for serving)

Instructions

  • Sear the Beef:
  • Season beef strips with salt and pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat. Sear beef in batches until browned (about 1–2 minutes per side). Remove and set aside.
  • Cook the Veggies:
  • Add remaining oil to the skillet. Sauté onions and mushrooms until golden, about 5–6 minutes. Add garlic and cook for 1 more minute.
  • Make the Sauce:
  • Sprinkle flour over the veggies, stir to coat. Gradually pour in beef broth, stirring constantly. Add mustard and Worcestershire sauce. Simmer for 3–4 minutes until slightly thickened.
  • Finish with Cream:
  • Lower heat and stir in sour cream until smooth. Return beef to the pan and heat through (do not boil). Taste and adjust seasoning.
  • Serve:
  • Spoon over noodles, rice, or mashed potatoes. Garnish with parsley and serve hot.

Notes

  • Don’t overcook the beef – quick searing keeps it tender.
  • Use Greek yogurt instead of sour cream for a lighter version.
  • Can be made with ground beef for a budget-friendly twist.
