- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1/2 red onion, cut into chunks
- 1 cup BBQ sauce (your favorite brand or homemade)
- 2 tablespoons olive oil
- 1 tablespoon soy sauce (optional, for depth)
- Salt & pepper, to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a large bowl, whisk together BBQ sauce, olive oil, soy sauce, salt, and pepper.
- Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes (up to 4 hours).
- Preheat grill to medium-high heat.
- Thread chicken, pineapple, bell peppers, and onion onto skewers in an alternating pattern.
- Grill kabobs for 10–12 minutes, turning occasionally and brushing with extra BBQ sauce, until chicken is cooked through and lightly charred.
- Serve hot, optionally with rice or a side salad.

- Add zucchini or mushrooms to the skewers for extra color and nutrients.
