Description

These BBQ Pineapple Chicken Kabobs are a tropical twist on a grilling classic—juicy chunks of chicken marinated in smoky barbecue sauce, paired with sweet pineapple and crisp bell peppers. Ideal for cookouts or weeknight dinners, they bring a perfect balance of sweet, smoky, and tangy flavors to the table.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1/2 red onion, cut into chunks
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce (optional, for depth)
  • Salt & pepper, to taste
  • Wooden or metal skewers

Instructions

  • If using wooden skewers, soak them in water for at least 30 minutes.
  • In a large bowl, whisk together BBQ sauce, olive oil, soy sauce, salt, and pepper.
  • Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes (up to 4 hours).
  • Preheat grill to medium-high heat.
  • Thread chicken, pineapple, bell peppers, and onion onto skewers in an alternating pattern.
  • Grill kabobs for 10–12 minutes, turning occasionally and brushing with extra BBQ sauce, until chicken is cooked through and lightly charred.
  • Serve hot, optionally with rice or a side salad.

Notes

  • Add zucchini or mushrooms to the skewers for extra color and nutrients.
  • Great with teriyaki sauce instead of BBQ for an Asian-inspired twist.
  • Leftovers can be removed from skewers and used in wraps or salads.
