Description

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 1/2 cup BBQ sauce (plus extra for brushing)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/2 cup shredded cheddar cheese (optional)
  • Dressing of choice (ranch, vinaigrette, or BBQ ranch)

Instructions

  • Preheat grill or grill pan over medium-high heat.
  • In a bowl, toss chicken pieces with olive oil, garlic powder, smoked paprika, salt, pepper, and BBQ sauce.
  • Thread the chicken onto skewers.
  • Grill skewers for 10–12 minutes, turning occasionally and brushing with extra BBQ sauce until cooked through.
  • While chicken is cooking, arrange salad greens, tomatoes, cucumber, red onion, avocado, and cheese on a large platter or individual plates.
  • Remove chicken from skewers and place over the salad.
  • Drizzle with dressing and serve immediately.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • For extra flavor, marinate the chicken in BBQ sauce for 1 hour before grilling.
