- 2 chicken breasts, cut into bite-sized pieces
- 1/2 cup BBQ sauce (plus extra for brushing)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced
- 1/2 cup shredded cheddar cheese (optional)
- Dressing of choice (ranch, vinaigrette, or BBQ ranch)
Instructions
- Preheat grill or grill pan over medium-high heat.
- In a bowl, toss chicken pieces with olive oil, garlic powder, smoked paprika, salt, pepper, and BBQ sauce.
- Thread the chicken onto skewers.
- Grill skewers for 10–12 minutes, turning occasionally and brushing with extra BBQ sauce until cooked through.
- While chicken is cooking, arrange salad greens, tomatoes, cucumber, red onion, avocado, and cheese on a large platter or individual plates.
- Remove chicken from skewers and place over the salad.
- Drizzle with dressing and serve immediately.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- For extra flavor, marinate the chicken in BBQ sauce for 1 hour before grilling.
