Description

A flavorful and healthy meal featuring BBQ chicken paired with roasted sweet potatoes, perfect for a balanced dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place sweet potato cubes on a baking sheet, drizzle with olive oil, and season with salt, pepper, smoked paprika, and garlic powder. Toss to coat evenly.
  3. Roast sweet potatoes in the oven for 25–30 minutes, flipping halfway through, until tender and golden brown.
  4. While sweet potatoes are roasting, season chicken breasts with a pinch of salt and pepper.
  5. Grill or pan-cook the chicken over medium heat for 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
  6. Brush BBQ sauce over the cooked chicken and let it cook for another 1–2 minutes on each side to caramelize the sauce.
  7. Remove from heat and let rest for a few minutes.
  8. Serve BBQ chicken alongside roasted sweet potatoes. Garnish with fresh parsley if desired.

  • You can substitute chicken breasts with thighs for juicier meat.
  • Use homemade or store-bought BBQ sauce based on your preference.
