- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Place sweet potato cubes on a baking sheet, drizzle with olive oil, and season with salt, pepper, smoked paprika, and garlic powder. Toss to coat evenly.
- Roast sweet potatoes in the oven for 25–30 minutes, flipping halfway through, until tender and golden brown.
- While sweet potatoes are roasting, season chicken breasts with a pinch of salt and pepper.
- Grill or pan-cook the chicken over medium heat for 5–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C).
- Brush BBQ sauce over the cooked chicken and let it cook for another 1–2 minutes on each side to caramelize the sauce.
- Remove from heat and let rest for a few minutes.
- Serve BBQ chicken alongside roasted sweet potatoes. Garnish with fresh parsley if desired.
