A delicious twist on the classic grilled cheese, this BBQ Chicken Grilled Cheese Sandwich combines smoky barbecue chicken with melty cheese and crispy bread for a hearty, comforting meal.

- 1 cup cooked shredded chicken
- 1/3 cup barbecue sauce
- 4 slices of bread
- 1 cup shredded cheddar cheese
- 2 tbsp butter, softened
- Optional: sliced red onions or pickles
Instructions
- In a bowl, mix the shredded chicken with barbecue sauce until well coated.
- Butter one side of each slice of bread.
- Place two slices of bread, butter side down, in a skillet over medium heat.
- Layer each with half the cheese, the BBQ chicken mixture, and optional toppings if using.
- Top with the remaining slices of bread, butter side up.
- Grill each side for 3–4 minutes or until the bread is golden brown and the cheese is melted.
- Remove from skillet, slice in half, and serve warm.
Notes
- Use rotisserie chicken for a quick prep option.
- Try adding smoked gouda or mozzarella for variation.
