Ingredients

- 1 teaspoon Dijon mustard (optional)
- 1 teaspoon honey or maple syrup (optional)
- 1 small garlic clove, minced (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- In a small bowl or jar, combine the vinegar, mustard, honey, and minced garlic if using.
- Whisk or shake until the mixture is well blended.
- Slowly add the olive oil while whisking continuously, or add all ingredients to a jar and shake vigorously.
- Season with salt and pepper to taste.
- Adjust ingredients to balance acidity and sweetness as desired.
Notes
- Store in an airtight container in the fridge for up to 1 week.
- Shake well before each use as the oil and vinegar may separate.
