- 1 lb large shrimp, peeled and deveined
- 1/2 cup buttermilk
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- Salt and pepper, to taste
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp Sriracha sauce (adjust to taste)
- Vegetable oil, for frying
- Chopped green onions, for garnish (optional)
- Shredded lettuce, for serving (optional)
Instructions
- In a medium bowl, marinate the shrimp in buttermilk for 15-20 minutes.
- In another bowl, mix the cornstarch, flour, salt, and pepper.
- In a separate bowl, whisk together mayonnaise, sweet chili sauce, and Sriracha to make the Bang Bang sauce. Set aside.
- Heat vegetable oil in a deep skillet or fryer to 375°F (190°C).
- Remove shrimp from buttermilk and dredge in the flour mixture until fully coated.
- Fry shrimp in batches for 2-3 minutes or until golden and crispy. Drain on paper towels.
- Toss the fried shrimp in the prepared Bang Bang sauce until evenly coated.
- Serve immediately over shredded lettuce and garnish with green onions, if desired.
