- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or vegetable oil
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup chia seeds
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
- In a large bowl, mash the bananas.
- Add eggs, honey or maple syrup, oil, and vanilla extract. Mix well.
- Stir in the flour, oats, chia seeds, baking soda, salt, and cinnamon until combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan before slicing and serving.
Notes
- For added texture, mix in chopped nuts or chocolate chips.
- Can be stored in the refrigerator for up to 5 days.
- Freezes well for longer storage.
