For the Pizza:
- 1 pizza dough for a 12-inch pizza
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 3 oz crimini mushrooms, sliced
- 1 tbsp olive oil
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
- 1 cup mozzarella cheese, shredded
- 1/2 cup fresh baby spinach leaves
- 3 oz crumbled goat cheese
- Sprinkle of sea salt
- 1 tbsp thick balsamic vinegar
Instructions
1. Prepare the Dough and Oven:
- Preheat oven to 550°F (290°C). Prepare the pizza dough according to your chosen recipe or package instructions.
2. Infuse the Dough with Garlic Oil:
- Brush 2 tbsp olive oil evenly onto the prepared pizza dough.
- Sprinkle minced garlic over the top for a flavorful base.
3. Sauté the Mushrooms:
- Heat 1 tbsp olive oil in a skillet over medium-high heat.
- Add red pepper flakes and allow the oil to heat up.
- Toss in sliced mushrooms and cook undisturbed for 2 minutes to brown one side. Flip and brown the other side.
- Season with salt and pepper to taste. Set aside.
4. Assemble the Pizza:
- Sprinkle 2/3 cup mozzarella cheese over the prepared dough.
- Evenly distribute sautéed mushrooms and fresh spinach.
- Add the remaining 1/3 cup mozzarella and sprinkle crumbled goat cheese on top.
- Season the assembled pizza with a sprinkle of sea salt.
5. Bake the Pizza:
- Bake the pizza in the preheated oven for 13-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
6. Cool, Slice, and Drizzle:
- Allow the pizza to cool for 3 minutes before slicing into 6 slices.
- Drizzle with 1 tbsp balsamic vinegar and serve with extra red pepper flakes if desired.
