Ingredients
- Shrimp: 1 lb large shrimp, peeled and deveined
- Olive Oil: 1 tsp
- Kosher Salt: 1/2 tsp
- Fresh Cracked Black Pepper: 1/2 tsp
- Crab Meat: 1 lb lump crab meat
- Cracker Crumbs: 1 cup (use gluten-free crackers or Ritz)
- Garlic: 2 cloves, minced
- Fresh Parsley: 1/3 cup, chopped
- Lemon: Zest and juice of 1 lemon (plus wedges for serving)
- Unsalted Butter: 1/2 stick, melted
Instructions
- Preheat Oven:
Preheat your oven to 425°F (220°C). - Prepare the Shrimp:
Butterfly the cleaned shrimp by cutting down the back of the spine most of the way through without cutting all the way. Toss shrimp in a bowl with olive oil, salt, and pepper. Set aside. - Make the Stuffing:
In a mixing bowl, combine crab meat, cracker crumbs, garlic, parsley, lemon zest, lemon juice, and melted butter. Mix until well combined. - Assemble the Casserole:
Arrange the seasoned shrimp in a single layer in an oven-safe baking dish, with the cut sides down and tails facing up. (Don’t worry if the shrimp don’t stand perfectly upright; the stuffing will cover them.)
Spoon the crab stuffing over and around the shrimp evenly. - Bake:
Bake in the preheated oven for 12-14 minutes, or until the shrimp are just cooked through and the stuffing is lightly golden. - Optional Broil:
For a crispier topping, broil on high for 1 minute, keeping a close eye to prevent burning. - Serve:
