Description

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • Optional: fresh parsley, for garnish

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  • Place salmon fillets on one side of the sheet and asparagus on the other.
  • Drizzle everything with olive oil and lemon juice.
  • Sprinkle garlic, seasoning, salt, and pepper over salmon and asparagus.
  • Lay lemon slices on top of each salmon fillet.
  • Bake for 15–18 minutes, or until salmon flakes easily with a fork and asparagus is tender.
  • Garnish with parsley before serving, if desired.

Notes

  • Add cherry tomatoes or sliced red onion for extra flavor
  • Make individual foil packets for easier cleanup
