  • 1 ripe avocado
  • Juice of 1/2 lemon
  • Pinch of sea salt or pink Himalayan salt

  • 2 slices of bread (preferably sourdough)

Instructions

Step 1: Cook the Mushrooms

  1. Prepare Mushrooms: Wash and slice the mushrooms.

  3. Cook Mushrooms: Add sliced mushrooms, tamari sauce, and cook for 8–10 minutes until the water from the mushrooms evaporates.
  4. Season: Stir in fresh thyme and a sprinkle of black pepper. Remove from heat.

Step 2: Prepare the Avocado

  1. Mash Avocado: In a small bowl, mash the avocado with a fork.
  2. Season: Mix in lemon juice and a pinch of salt.

Step 3: Assemble the Toast

  1. Toast Bread: Toast the bread slices until golden and crispy.
  2. Layer Toppings: Spread a thick layer of mashed avocado on each slice, then top with the garlicky mushrooms.
