Description

Learn how to make Authentic Mexican Rice that’s fluffy, flavorful, and perfect as a side dish or a base for your favorite Mexican-inspired meals! With simple ingredients like long-grain rice, tomato sauce, and spices, this recipe is quick, easy, and utterly delicious.

Ingredients

Units Scale

For the Rice:

  • 2 tbsp olive oil or vegetable oil
  • 1 cup long-grain white rice (e.g., Jasmine rice)
  • 48 oz canned tomato sauce (adjust based on preference)
  • 2 cups water
  • 1 tsp minced garlic (about 2 cloves)
  • 2 tsp Caldo de Tomate (tomato bouillon)
  • 1 tsp chili powder

Instructions

1. Toast the Rice:

  • Heat oil in a 3-quart sauté pan over medium heat.
  • Add the rice and stir to coat in the oil.
  • Cook, stirring frequently, for 3-5 minutes until the rice turns golden.

2. Add Spices:

  • Stir in chili powder, Caldo de Tomate, and minced garlic until evenly combined.

3. Combine Liquids:

  • Pour in water and tomato sauce, stirring to mix thoroughly.

4. Simmer the Rice:

  • Bring the mixture to a boil, then reduce the heat to low and cover the pan.
  • Simmer for 20 minutes, or until the liquid is absorbed.

5. Rest and Fluff:

  • Turn off the heat and let the rice rest, covered, for 5-10 minutes.
  • Fluff the rice with a fork before serving.

Notes

  • Tomato Sauce: Use 4 oz for a lightly sauced rice or 8 oz for a richer tomato flavor. Freeze any leftover sauce for later use.
  • Vegetables: Add frozen peas and carrots before covering for additional color and nutrition.
  • Rinsing Rice: Rinsing is optional and not required for this recipe.
  • Optional Add-ins: For added flavor, include chopped serrano peppers or fresh Roma tomatoes before serving.
