Description

Apple Pie Cheesecake Cookies combine the rich creaminess of cheesecake with the warm, spiced sweetness of apple pie, all tucked into a soft, buttery cookie. Perfect for fall, holiday baking, or whenever you’re craving a comforting, bakery-style treat at home.

Ingredients

Units Scale
  • For the Cookies:
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • For the Apple Pie Filling:
  • 1 medium apple, peeled, cored, and finely diced
  • 1 tbsp butter
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • Pinch of nutmeg (optional)
  • For the Crumble Topping (Optional):
  • 1/4 cup flour
  • 2 tbsp brown sugar
  • 2 tbsp cold butter

Instructions

  • Make the Filling: In a skillet, melt butter over medium heat. Add apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until soft and syrupy. Let cool.
  • Make the Dough: In a bowl, cream butter, cream cheese, and sugar until light. Mix in egg and vanilla. In another bowl, whisk flour, baking powder, and salt, then slowly add to wet mixture until just combined. Chill dough for 30 minutes.
  • Form the Cookies: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop dough into balls and flatten slightly. Create a small well in the center of each.
  • Fill and Top: Spoon a bit of apple filling into each well. If using crumble, combine flour, sugar, and butter until crumbly, then sprinkle on top.
  • Bake: Bake for 12–14 minutes or until edges are set and bottoms are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Use store-bought apple pie filling for a shortcut.
  • Add a drizzle of cream cheese glaze or caramel sauce on top for extra indulgence.
  • Make-ahead tip: Dough and filling can be refrigerated separately for up to 2 days before baking.
