Delight in these soft, baked apple fritter bites coated in a sweet apple cider glaze. Perfect for fall or anytime you crave a quick and delicious treat!


Ingredients:

For the Fritter Bites:

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)

For the Apple Cider Glaze:

  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat Oven: Preheat to 400°F and lightly grease a baking sheet with nonstick cooking spray.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Mix Wet Ingredients: In a large bowl, whisk melted butter and sugar until combined. Add egg, vanilla, and applesauce, mixing until smooth.
  4. Combine Batter: Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in the diced apples.
  5. Portion Batter: Scoop 1-tablespoon portions of batter onto the prepared baking sheet, spacing them a few inches apart.
  6. Bake: Bake for 10 minutes. Remove from the oven and turn the broiler to high.

Prepare the Glaze:
7. In a small bowl, whisk together powdered sugar and apple cider/juice until smooth and pourable.

Glaze and Broil:
8. Brush warm fritter bites with some of the glaze, letting it drip down the sides. Broil for 2–4 minutes, rotating the pan frequently, until the glaze bubbles and caramelizes slightly.
9. Remove from the oven and brush remaining glaze over the fritters.

Cool and Serve:
10. Let the fritters sit for 15 minutes to allow the glaze to set. Serve and enjoy!
