- 4 boneless, skinless chicken breasts
- 1 apple (such as Honeycrisp or Granny Smith), thinly sliced
- 4 oz brie cheese, sliced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp fresh thyme or 1/2 tsp dried
- 1 tbsp Dijon mustard (optional, for extra flavor)
- Toothpicks or kitchen twine
- Balsamic glaze or pan sauce for finishing (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Slice a pocket into each chicken breast, being careful not to cut through.
- Stuff each pocket with apple slices and brie. Secure with toothpicks or twine.
- Season the outside with salt, pepper, thyme, and brush with Dijon mustard if using.
- Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden, 2–3 minutes per side.
- Transfer to the baking dish and bake for 15–20 minutes, or until internal temp reaches 165°F (74°C).
- Rest for 5 minutes, remove toothpicks or twine, and serve with balsamic drizzle if desired.
Notes
- Brie rind is edible but can be removed if preferred.
