Description

  • 2 medium baking apples, peeled and chopped
  • 1/2 cup light brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg, room temperature
  • 1/3 cup white granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup full-fat sour cream, room temperature
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt

For the Glaze:

  • 1 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • 3 tbsp milk

Instructions

1️⃣ Prepare the Apple Mixture:

  1. Preheat oven to 350°F (175°C). Grease a loaf pan with nonstick spray.
  2. In a medium bowl, combine chopped apples, brown sugar, cinnamon, and ginger. Mix well and set aside.

2️⃣ Make the Batter:

  1. In a large bowl, whisk together the egg, granulated sugar, oil, sour cream, and vanilla extract until smooth.
  2. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

3️⃣ Assemble the Bread:

  1. Fold 3/4 of the apple mixture into the batter.
  2. Pour the batter into the prepared loaf pan.
  3. Top the batter with the remaining apple mixture, gently pressing it into the surface.

4️⃣ Bake:

  • Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for at least 30 minutes before removing.

5️⃣ Make the Glaze:

  1. In a small bowl, whisk together powdered sugar, vanilla extract, and milk until smooth and pourable.
  2. Drizzle the glaze over the cooled bread before serving.

  • Apple Variety: Granny Smith, Honeycrisp, or Fuji apples work well for this recipe.
