For the Bread:
- 2 medium baking apples, peeled and chopped
- 1/2 cup light brown sugar
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1 large egg, room temperature
- 1/3 cup white granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup full-fat sour cream, room temperature
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
For the Glaze:
- 1 cup powdered sugar, sifted
- 1 tsp vanilla extract
- 3 tbsp milk
Instructions
1️⃣ Prepare the Apple Mixture:
- Preheat oven to 350°F (175°C). Grease a loaf pan with nonstick spray.
- In a medium bowl, combine chopped apples, brown sugar, cinnamon, and ginger. Mix well and set aside.
2️⃣ Make the Batter:
- In a large bowl, whisk together the egg, granulated sugar, oil, sour cream, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
3️⃣ Assemble the Bread:
- Fold 3/4 of the apple mixture into the batter.
- Pour the batter into the prepared loaf pan.
- Top the batter with the remaining apple mixture, gently pressing it into the surface.
4️⃣ Bake:
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for at least 30 minutes before removing.
5️⃣ Make the Glaze:
- In a small bowl, whisk together powdered sugar, vanilla extract, and milk until smooth and pourable.
- Drizzle the glaze over the cooled bread before serving.
