- For the Fish Tacos:
- 1 lb white fish fillets (cod, tilapia, or haddock), cut into strips
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Olive oil spray
- 8 small corn or flour tortillas
- For the Cilantro Lime Slaw:
- 2 cups shredded cabbage (green or a mix)
- 1/2 cup shredded carrots
- 1/4 cup chopped fresh cilantro
- 2 tbsp mayo
- 2 tbsp plain Greek yogurt or sour cream
- Juice of 1 lime
- 1 tsp honey
- Salt & pepper to taste
Instructions
- Prepare the Slaw: In a bowl, mix cabbage, carrots, and cilantro. In another bowl, whisk mayo, yogurt, lime juice, honey, salt, and pepper. Pour dressing over slaw, toss to coat. Chill until ready to serve.
- Prep the Fish: Season fish strips with salt, pepper, paprika, and garlic powder. Dredge in flour, dip in beaten egg, and coat with panko.
- Air Fry the Fish: Preheat air fryer to 400°F. Place fish strips in the basket in a single layer. Spray with olive oil. Cook for 8–10 minutes, flipping halfway, until golden and crispy.
- Warm the Tortillas: Heat tortillas on a skillet or in the microwave until soft and pliable.
- Assemble Tacos: Add crispy fish to each tortilla, top with cilantro lime slaw. Serve with lime wedges and hot sauce if desired.
