Description

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Buttercream Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp milk or heavy cream
  • 1 tsp vanilla extract
  • Blue gel food coloring
  • Decorations:
  • Green-tinted shredded coconut (for grass)
  • Fondant ducklings
  • Chocolate rocks or candies
  • Gelatin sheet or blue piping gel
  • Edible flowers (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  • In a bowl, whisk flour, baking powder, and salt.
  • In another bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition, then add vanilla.
  • Alternate adding the flour mixture and milk to the wet ingredients until just combined.
  • Divide batter between pans and bake for 25–30 minutes. Cool completely.
  • For buttercream, beat butter, then add powdered sugar, vanilla, and milk. Tint blue.
  • Assemble layers with buttercream, frost the entire cake.
  • Create a “pond” using blue piping gel or gelatin sheet, add fondant ducklings and decorations.

Notes

  • You can make ducklings up to 2 days in advance using fondant or modeling chocolate.
  • Refrigerate frosted cake for 20–30 minutes before decorating for best results.
