- Cake Layers:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, room temperature
- 2 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- Buttercream Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2–3 tbsp milk or heavy cream
- 1 tsp vanilla extract
- Blue gel food coloring
- Decorations:
- Green-tinted shredded coconut (for grass)
- Fondant ducklings
- Chocolate rocks or candies
- Gelatin sheet or blue piping gel
- Edible flowers (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
- In a bowl, whisk flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then add vanilla.
- Alternate adding the flour mixture and milk to the wet ingredients until just combined.
- Divide batter between pans and bake for 25–30 minutes. Cool completely.
- For buttercream, beat butter, then add powdered sugar, vanilla, and milk. Tint blue.
- Assemble layers with buttercream, frost the entire cake.
- Create a “pond” using blue piping gel or gelatin sheet, add fondant ducklings and decorations.
Notes
- You can make ducklings up to 2 days in advance using fondant or modeling chocolate.
- Refrigerate frosted cake for 20–30 minutes before decorating for best results.
