  • For the Sponge Cake Base:
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For the Strawberry Mousse:
  • 2 cups fresh strawberries, hulled
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • 1 cup heavy whipping cream, cold
  • For the Strawberry Glaze (optional):
  • 1/2 cup strawberry puree
  • 1 tablespoon sugar
  • 1 teaspoon gelatin
  • 1 tablespoon water
  • Optional Garnish:
  • Fresh strawberries, whipped cream, mint leaves

Instructions

  • Make the Cake Base:
  • Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  • Beat eggs, sugar, and vanilla for 5–6 minutes until thick and pale.
  • Sift in flour and salt, and fold gently.
  • Pour into pan and bake for 18–20 minutes. Let cool completely in the pan.
  • Make the Strawberry Mousse:
  • Blend strawberries with sugar and lemon juice until smooth.
  • In a small bowl, sprinkle gelatin over cold water and let sit 5 minutes.
  • Warm strawberry puree and dissolve the gelatin into it. Cool to room temp.
  • Whip cream to soft peaks. Gently fold into cooled strawberry mixture.
  • Assemble the Cake:
  • Place the cooled sponge cake in a springform pan.
  • Pour strawberry mousse over the base and smooth the top.
  • Chill for 4 hours or until set.
  • Optional Glaze:
  • Bloom gelatin in water. Heat strawberry puree and sugar, then stir in gelatin.
  • Cool slightly and pour over set mousse layer. Chill until firm.
  • Garnish & Serve:
  • Decorate with whipped cream, fresh strawberries, or mint. Slice and serve chilled.

Notes

  • Use stabilized whipped cream for firmer mousse.
  • Make ahead: Best chilled overnight.
  • Can be made in individual dessert cups or a loaf pan.
