Ingredients
- 2 cups (480ml) full-fat milk (or toned milk)
- 1/2 cup (100g) granulated white sugar
- 1 pinch baking soda
Instructions
1️⃣ Heat the milk & sugar: In a heavy-bottomed pan, add milk and sugar. Bring it to a boil over medium heat, stirring constantly.
2️⃣ Simmer & reduce: Lower the heat and let it simmer, stirring occasionally, until the mixture reduces by almost half (about 30-40 minutes).
3️⃣ Add baking soda: Once reduced, add a pinch of baking soda and mix well. This prevents crystallization and gives a smooth texture.
4️⃣ Check consistency: The mixture should be thick, creamy, and slightly off-white in color.
5️⃣ Cool & store: Let it cool completely, then transfer to an airtight jar. Store in the fridge for up to 1 week.
